Hi Lee, wow, your fudge recipe sounds delicious! Since fudge recipes can be a bit tricky, I'm reluctant to recommend changing the amount of cocoa or adding an acidic ingredient. Since you prefer the flavor you get with natural cocoa, I would stick with that type of cocoa in this recipe.
