Thank you for a much more informative article that I expected. I already knew about Dutch Process vs. "Natural" Cocoa from, or all things, a minor in history.

I would greatly desire if the original author could expand it by including the use of Cacao, or less-processed natural cocoa that is showing up in stores and in trendy blogs.
