Loved the article but I’m confused. I have researched Dutch-process cocoa cookie recipes on the internet and they all use baking soda as an ingredient, and almost none use baking powder. Should I ignore that and replace with baking powder? Prior to seeing your article I had tried one recipe a while ago which is why I even have the Dutch cocoa. I didn’t notice a soapy flavor but the cookies never changed shape during baking and were dry.
