I found this article so helpful! Thank you for your hard work, I've been baking at least 40 years and I never truly understood baking soda baking powder in the Coco's I use. I love Dutch cocoa, it's the one I prefer to use. Although I will agree with you that it doesn't make a very good frosting. And now I agree to it's probably the lack of acid that doesn't make a good frosting. Thanks again for your hard work!
