When my bread cools and firms up, I slice the whole thing, free-hand with an electric knife. This works better for me than anything else, and I can easily manage straight and even slices with it. I wrap the slices in pairs in plastic wrap, and then aluminum foil. Then I stack them in two vertical rows in my freezer. It works really well. I can pull out 2 slices any time I want a sandwich, etc. It stays nice and fresh, and I can eat the loaf at my own pace and not have to worry about it molding. I do keep them at the front of the freezer as it makes it easy to get them, and haven't had any problems. They are always visible-obviously bread, even without being labeled, which I am notorious for, and I don't have to hunt in the back of a packed freezer for them, with a flashlight, as my freezer has no light. I can also see at a glance how many slices I have left, and if I need to bake bread. For a one-person household, it's a win-win situation.
