Thank you for this article! I've tried two recipes swapping 100% white whole wheat flour for AP flour and both failed to rise like their counterparts do. I was warned about the moistening problem via the hotline which was helpful; these exact weights and corrective measures were exactly what I was looking for to apply these substitutions to other recipes!
