Hi there, Chris! White whole wheat flour can be used as a 1:1 substitute for traditional whole wheat flour made from red wheat berries. The only difference between the two is that one is made from white berries and has a lighter color and milder flavor and the other is made from red wheat berries and has a more prominent flavor and is darker in color. We're not familiar with the recipe you're referring to though so it can be tricky to troubleshoot, we'd recommend trying out our 100% Whole Wheat Bread for the Bread Machine recipe.
