Hi there, Grace! You can make the substitution by weight if you'd like, but it's not a 1:1 swap because whole wheat flour is lighter per cup than all-purpose flour. We weigh whole wheat (both white and premium) at 113 grams per cup and all-purpose at 120 grams, so for each cup (or 120 grams) of all-purpose flour you replace with whole wheat you'll want to use 113 grams.
