I keep two batches of sourdough starter, one fed with APF & the other with WWW, and learned whole wheat doesn't have as much digestible 'food' as all-purpose. The bran and extra goodies in whole wheat add flavor & texture to baked goods, but the 'wee beasties' can't eat it. After weeks wondering why the WWW batch didn't rise like the standard white model I figured that out, started giving it some extra flour- either WWW or an occasional booster shot of APF, (and water, as the above article mentions, whole wheat absorbs more), and all's well.
