Good question, Tom! Adding yeast to a recipe can make it rise more quickly, but not necessarily higher. Additionally, it may make your bread taste overly yeasty, rather than allowing the more complex flavors of your dough (which form during a slower rise) to develop and shine through. Happy baking!
