While we've never tried to convert a starter like this Mary, we think three or four feedings (about 12 hours apart) while keeping it at room temperature will remove most of the potato flakes from the starter and give you a nice base to continue using a flour water diet from here on out! However, with such a dramatic shift in the bacterial culture be extra observant of any mold or orange and pink batches forming in the starter. Those are a sign of trouble and you may need to discard the whole starter in some cases.
