Linda, you can keep the starter in the fridge and feed it weekly. When you are ready to bake bread, take it out of the fridge and feed it without discarding any until you have enough starter for your recipe plus some to maintain your starter. You do not need to clean the crock in between feedings. You should take a look at our Sourdough Baking Guide. It has a ton of useful sourdough information.
