We're glad to hear that you're enjoying your sourdough journey, Kris! To increase the amount of starter you have on hand you have a couple of options. You can either feed your starter without discarding on the last feed before you plan to bake, this is called a "build." Or you can slowly increase the ratios of flour and water for your feedings a day or so in advance of baking so that you end up with enough for the recipe as well as enough starter to carry on your culture.
