Hi there, Michele! When measuring starter in volume we recommend stirring down the starter before measuring it to even out the texture a bit. Your starter should always be roughly the same consistency, if it's thicker sometimes it sounds like a bit too much flour is sneaking its way into the mixture — we recommend using the fluff and sprinkle technique for measuring dry ingredients in volume.
