Hi there, Laura! It sounds like the loaf just needs to be shaped a tad tighter. Check out our Shaping a boule blog article. IT can also be helpful to bake the loaf in a Dutch oven, as the sides of the pot will encourage the loaf to rise upwards rather than spread out. We hope this helps!
