Hi Katy! The starter will develop more flavor over time but there are a few things that you can do to increase the flavor of your bread — try feeding the starter with whole wheat flour for the last feeding before you bake or swap out up to 50% of the flour in the bread recipe for whole wheat. Whole grains add a lot of flavor and ferment a bit faster. You can also let the shaped loaf rise overnight in the fridge, the cooler temperatures slow fermentation and build more sour flavor.
