When a recipe for bread calls, for example, 1 cup of well-fed sourdough, wouldn't that amount depend on how wet or dry (thick) your starter is? My starter varies in thickness from time to time (pancake batter versus more like a wet sticky dough) so it is hard to know what will work in a recipe.
