After I feed my starter, I leave it out on the counter for 12 hours and then store it in the refrigerator. And though it's doubled in size before it goes in, it seems to shrink way down after it's been cooled. I take it out for an hour or two before I bake bread, and it seems to work fine. But is this correct? Is there something I should or shouldn't be doing?
