Hi Skip. Whole Wheat banana muffins sound delicious! While storing whole grain flours in the freezer can extend the usable shelf life by a number of months (check out this great blog for more details: The best way to store whole grains), if the flour has been stored on the counter or in a cupboard, we do still recommend using it by the best by date. Our extensive testing has shown it is an accurate indication of the flour’s quality.  We want to help ensure that your bakes have the best results, so using the guidelines listed in this blog are suggested.
