I owned a bakery shop and I usually use King Arthurs Gluten free flour, last month I bought 8 bags of flour on Amazon of Kings Arthur. All of them were past the expiration date 1 is more than a year and I don't live in the US so I cannot return it. It is common said that flour is one of the best kept ingredients over the years if the storage is good. So, I don't know... you are scaring me about the expired flours but until now I haven't had any issues and :/ I hope I don't cause I bought a lot to have it on my pantry cause here they don't sell them. BTW check with your suppliers cause that annoyed me very much. To find out all of them were expired. Not good at all.
