I found an unopened bag of King Arthur whole wheat flour in an airtight bucket in my cool basement. It was almost exactly one year past the date on the sack, so I decided to taste a pinch. Raw, it had a bitter taste, so I added some sugar to the soda bread recipe, and hoped for the best. I got the best! The soda bread was wonderful with 2.5 Tablespoons of sugar added.
I quickly made another loaf to share, but forgot to put the sugar in. It was good, too! No bitter taste at all. Only now I like the sugar-added version better, as it tastes more like what my college roommate made, back in the day.
I guess it pays to buy the best. Thank you, King Arthur Flour Company.
