Thank you for this interesting and informative article. I wonder if you are familiar with "Dry Canning"? This is a process that I became familiar with several years ago and have been doing, successfully, for certain types of products. Flour, granulated sugar, rolled oats, to name a few. The instructions I have been following are simple and I am happy to share if you are interested. I have half-gallon, vacuum sealed, canning jars of flour, sugar, and oats that I have used throughout this "stay at home" time.
