Our bread machine was consistently over-proofing the bread recipes and they were falling back on themselves before baking, using 2 tsp active dry or SAF instant yeast. I cut the yeast back to about 1/2 tsp and the loaves were coming out as they should. I have also made sourdough loaves by using the bread machine manually. Mix the dough up with the machine, shut down the machine while the dough proves to the size you want it, then put the machine in the "bake only" cycle to finish.
