Angel biscuits are the perfect product for reduced yeast, fed starter and longer rise approaches. The texture is made even more pillowy with longer rise time and you always have the insurance of a tsp of baking powder in the background. A Southern staple, Angel biscuits are half-way between a roll and a biscuit in texture and taste -- re-heat nicely, toast beautifully and work well for sandwiches like chicken salad, pimento cheese or nut butters. They are delicious with all or part whole wheat flour.
