I've used SAF instant yeast that was around 5 years past its expiration date with great success (kept it in the freezer). If you're not sure about the viability, I would suggest making a bread that calls for a preferment, so you can assess the viability with a minimal commitment of ingredients (flour is still a little hard to come by, although it is getting easier). If it gets bubbly as it should, then you're good to go, if it doesn't then you haven't lost too much.
