PJ - so glad you posted this. I was trying to conserve the yeast I had left, but my grandson loves cinnamon raisin bread. So I modified the KAF sourdough Cinnamon Raisin bread recipe by increasing the amount of fed starter by a little bit, reducing the flour and water by the same % and completely eliminated the yeast! Took quite a bit longer to complete the whole process but the result was delicious! As long as I have the time, I'll do it this way again. Thanks for the inspiration. Now I'm looking for other recipes where I could do this! Let me know if you have other suggestions.
