I've made my own version of the coconut cake -- start with the Vanilla Cake Pan Cake recipe, use canned coconut milk for the liquid and melted unrefined coconut oil for the oil. Add some unsweetened shredded coconut (toasted if you're feeling fancy) to the dry ingredients. You can use coconut milk or unrefined coconut oil and confectioner's sugar, plus more shredded coconut, to frost.
