Hi, Lb! You could certainly leave it out at room temperature for 2-3 hours until it gets nice and puffy and bake it from that point instead of resting it in the fridge. You won't build up as much flavor from the slow fermentation of the fridge, but it does allow you complete a sourdough recipe start t finish in one day. Happy baking!
