Hi Jenna, adding inclusions to this bread will tend to cause a slightly denser final loaf, but I think it's totally possible. I think the amount of jalapeño and cheddar added could be about the same as called for in this recipe, or perhaps a touch more. I would add these ingredients during the last folding session before refrigeration, adding a few extra rounds of folding, as necessary, to evenly incorporate your add-ins. The rest of the process should be similar, although I wouldn't recommend preheating the oven to 500°F with these added ingredients; 450°F should work fine.
