I have been following this no-knead formula almost exclusively for about six months now. The quantities are great when baking for a potluck event or family gathering. At a church potluck the first loaf to disappear is ALWAYS the bread I bake with this formula! But, there are just two of us and a loaf starting with 600g of flour is a bit much for us to consume. So, I halved the recipe to give us a more manageable loaf to enjoy. The results have been better than expected. With a shorter baking time the crust is a bit lighter and the crumb is airier an chewier than the original formula. In short: less is more. I use a 2:1 ratio of KA bread and all-purpose flours, filtered water at 67% hydration, and a really vigorous starter I have developed over the last 8-10 months.This is the absolute best bread I've ever baked, and I'm having the most fun I've ever had doing it.
