Hi Julie, I would say your bread will probably take another 20-25 minutes to bake after you remove the lid. I don't usually bake to an interior temperature of 210F with this recipe either, so if it's richly brown, sounds hollow when you thunk it on the bottom, and reads at least 195-200F internal temperature, then I would consider it done. Be sure to let it cool completely before cutting into it.
