I tried this recipe and it was delicious, but I am on a low sodium diet so next time I would like to use a smaller percentage of salt. How much can I reduce the salt without greatly affecting the bread?
Also, how do you suggest that I modify hydration if I substitute about 20% of whole wheat flour?
