Pan de mie pans are excellent for baking bread that's the perfect rectangular shape ideal for slicing and making sandwiches. Without the lid here, the bread will bake up nice and domed. It's sort of a personal choice as well, but for this one we simply prefer the dome over the rectangle. Thanks!
