Hi there! I just made my first sourdough loaf yesterday using this recipe and the flavor was on point! The crust was also super crunchy, almost a bit too crunchy for some, but I loved it. I used a dutch oven to bake. The issue I had it that it didn't rise much, so the bread was very dense and slightly chewy. I'm odd and like chewy, but I wanted that open crumb. Could that be from an unripe starter or something else? And one other question. I used organic rye flour for my starter. Do I need to have a few starters going using different types of flour depending on the recipe, or is one starter good for any sourdough recipe? I'm going to try this recipe again. Thank you!
