We're glad that you've been enjoying this recipe, Clayton! It sounds like you might need a bit more surface tension on the top of the loaf, we'd recommend checking out our Shaping a boule blog article. Also, if you'd like to see if a proofing basket might help too, you can line a bowl with a flour-dusted tea towel and let your shaped loaf rise in there.
