I've made sourdough bread using this method for several months now and every loaf has come out delicious! I love how simple this process is. My only remaining issue is scoring. My dough never seems to develop much of a surface that can be scored, it is too sticky and the lame can't move through it smoothly. This is obviously only an aesthetic issue but I would love to get this final piece figured out! I don't have a proofing basket for the final rise and usually just let the bread rise on the counter, could that be the problem?
