Hi there, Jane! For a paler loaf, we'd recommend checking the bread on the lower end of the recommended bake time. Also, if you're using some kind of covered baking vessel you can leave the lid on longer or tent the loaf with foil to prevent browning.  We hope this helps and happy baking!
