Hi there, Lawrence! We wouldn't recommend doing a long overnight fermentation on the first and second rise, the loaf will likely over-proof. You're welcome to experiment with doing the first rise at room temperature and then the second rise after the loaf is shaped in the fridge overnight. Happy experimenting!
