Hi there, Fran! A Dutch oven isn't required but it is helpful. Using a lidded oven-safe vessel helps to trap steam which makes for a nice crispy crust and it also helps the loaf keep its shape. If you'll be baking your bread on a baking sheet, we'd recommend checking out our Steam in bread baking blog article for tips on how to add steam to the oven and create a nice light, crispy crust.
