Just made the bread. Haven't tasted it yet, but it rose beautifully, has a good crust and looks professional. Your loaf looks more golden. Did not use the malt. Mine has some darker spots. Baked in gas oven at 450 degrees. Used cast iron pot and parchment paper. Took lid off after first 20 minutes. Is there something that I can improve on? And, do you use KAF organic bread flour? Thank you for the great instructions and recipe. Julie
