Hi Robert! It likely isn't anything you did wrong, parchment paper just isn't all created equal, so it was most likely that the coating wasn't sufficient enough to help with sticking. We'd highly recommend trying out parchment at some point if you can, the quality is truly there and it's definitely noticeable. You can also try spraying the parchment with pan spray in the meantime to make it more non-stick.
