We keep atta in our house, which is Indian whole wheat flour, but it's much finer than the whole wheat flour I find in the US. I want to know more about the gluten content to know how I'd use this as a substitute. It seems like it would make really nice, fluffy whole wheat bread, but I want to know how to adjust it.
