Hi Katie, as long as your baking pot isn't likely to break when you place cold dough in it, the bread dough is generally fine to go straight from the fridge into the hot oven. If you have a ceramic pot that might be prone to thermal shock, I'd suggest letting the dough acclimate to the pot at room temperature for about 45 minutes or so before putting the pot and dough together into a preheated oven. When the dough sits in the pot like this before baking it's a little more likely to stick, so you may want to transfer the loaf to the pot on sprayed parchment paper.
