Hi Hobie! As humidity and moisture in the air increases, it can also increase in your flour depending on where it is stored. For this reason, sometimes reducing the water or increasing the flour is necessary to get a comparable feeling dough. This would be in the order of a few teaspoons or 10-15 grams less of water.
