I have made this a number of times, always with great results. I just have a general question about the starter. I always read that it should double in about 6 hours after feedng. My starter is four years old and must have come from Chernobyl wheat; it almost triples in 2 1/2 to 3 hours. I usually feed it once a week and refrigerate it. This always affects the fermentation and proofing times.
Should I use less than the recipes state?
