This process is an absolute revelation. I did this over the weekend. Knowing I have a cold house, I used 90g of starter. Otherwise, I followed the formula Martin itemized. I even went so far as to let one of my loaves sit in the fridge for 24 hours rather than the prescribed 12. Fantastic! It's the best oven spring I've had in ages! I am truly the boss of this process. Thank you so much!
