I made this recipe for the first time today and LOVE the method! I don't always have all day to babysit the dough. It had good oven spring and good texture but it feels damp inside. It is very brown on the outside and is baked to 214 degrees internal temp. I have had this result on almost all the recipes I've tried. What am I doing wrong?
