Hi Karissa, you're right that the sourdough starter maintenance routine is left rather open-ended here, although we do recommend that this recipe will work best if the sourdough discard is relatively fresh (fed within the last week). We generally advise that if you plan to store your starter in the refrigerator you give it a feeding and leave it out for 2-4 hours to start fermenting before sticking it in the fridge, so I would go with that method when you plan to store your main starter in the fridge. Our regular starter maintenance routine is outlined here. It sounds like your maintenance process is a bit different, but as long as you're feeding your starter at least once a week and your discard is derived from your main starter, then it should work. As this recipe is written, you can use the discard starter straight from the fridge.
