I used the first technique and its been 10 hours for my first rise and it's only risen like 1/2 an inch barely. should I keep it in the container until it doubles or should I divide the dough and start proofing in the refrigerator? Thank you for this recipe. I have not had much success after many loaves and scouring the internet. Hopefully I can overcome these difficulties soon.
