Love that you're up for a challenge Katie! While adding steam will certainly help your bread bake better (and keeping the temperatures the same), I wouldn't worry about preheating your baking sheet. It will heat up very quick in the high heat and preheating it will just make it more difficult to handle as you load the bread into the oven. Hope that helps, and happy baking!
